BANANA-COCONUT-DATE SMOOTHIE
Even though it is only May, the temperature here in New York City has already been in the 80s. Today it was almost 90!
In order to cool off after a long walk through the park, or as a refreshing after-dinner treat, I have been making smoothies. They are so easy to make, and they satisfy the sweet craving... while still being healthy!

I have been on a banana smoothie kick recently, and have slowly started adding different ingredients to the mix to make the smoothies a bit more interesting. It all started with swapping unsweetened vanilla coconut milk for my usual 2% milk. After adding a bit of tangy greek yogurt, I found that it balanced the sweetness of the bananas nicely. And finally, I started adding pitted dates to my smoothies to give them some richness of flavor that the bananas alone don't quite have.
The resulting banana-coconut-date smoothie is light and flavorful, and will definitely be a favorite this summer!

Ingredients:

1 to 1½ ripe bananas, sliced and frozen
¼ cup fat free Greek yogurt 1/3 cup unsweetened vanilla coconut milk 5 pitted dates, chopped t tbsp vanilla whey protein powder (optional) |
Directions:
Combine all ingredients in a blender or food processor. Blend until smooth.
